  咂酒,是黔西北、黔西南一带彝、苗群众自酿的传统饮料,其味醇香,是款待宾客的佳品。传说太平天国翼王石达开西南过贵州时曾赋诗赞道:“万颗明珠个瓮收,王候到此也低头。五龙抱定擎天柱,吸得乌江水倒流。”

  酿制咂酒,用玉米、高粱、荞麦均可,其方法特殊,烤制出来后酒味微甜而清香,类似于葡萄酒。取用咂酒时,主人用冷开水注入酒瓮中,然后将两根空心细竹管插至瓮底。竹管底部不通,根部四周钻有许多小孔,以棕叶包缠,使酒液由竹管导出饮用。也可直接用竹管、芦苇等物咂吸饮用。咂酒待客,历史悠久,别具情趣。旧《安顺府志》中有载:“男家于堂中备酒一坛,插空心小竹筒数根于其中,请客任意畅饮,名曰吃下马酒。”
